Turkey Leftovers Salad

  • 1 cup turkey leftovers, sliced
  • 1 handful arugula (or preferred greens)
  • 1 can tuna, drained
  • 1 can anchovies, drained
  • 2 tablespoons mayonnaise
  • ½ teaspoon capers, extra for garnishing
  • Juice of ½ lemon

Place the arugula in a bowl and add the sliced turkey on top. Set aside. In a separate bowl, combine the tuna, anchovies, mayonnaise, lemon juice and capers and mix until smooth. Add the mixture on top of the sliced turkey and garnish with extra capers. Enjoy Thanksgiving part 2!
