Rib-eye steak

  • 1 large rib-eye steak, trimmed and at room temperature
  • 1 tbsp. olive oil for brushing the steak
  • Sea salt and black pepper
  • 2 cloves garlic
  • A few sprigs of thyme and rosemary

Preheat the oven to 200°C/400°F/gas 6. Brush the steak with the oil and sprinkle with the fresh herbs, salt and pepper. Heat a large fryingpan over medium-high heat. Add the 2 cloves of garlic. Cook the steak for 3-4 minutes each side. Transfer to the oven and cook, turning halfway for another 15 minutes (medium-rare). Loosely cover the steak with aluminum foil and set aside to rest for about 5 minutes.
