Mac & cheese

  • 4 tbsp. unsalted butter
  • 70g/2.4 oz all-purpose flour
  • 1.3L low fat milk
  • 400g/14 oz dried pasta
  • 350g/12.3 oz grated cheddar
  • 115g/4 oz grated Gruyere
  • 1 tsp. Dijon mustard
  • Salt and pepper

Heat the broiler. In a large skillet on medium heat, melt the butter. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. Add pasta and cook, stirring constantly and scraping bottom of pan, until tender, 8 to 9 minutes. Remove from heat, stir in 3/4 of the cheese and mustard, and season with salt and pepper. Top with remaining cheese and broil until golden brown, about 2 minutes.
