Lamb chops with mint sauce

  • 1 teaspoon of butter
  • 12 lamb chops
  • Salt and pepper
  • 2 bunches mint
  • 1 tablespoon sugar
  • 2 to 4 tablespoons red wine vinegar
  • Salt and pepper
  • Dash of olive oil

Crush the mint leaves in a mortar and pestle. Dissolve the sugar in 100 ml boiling water and pour this over the mint. Mix in the vinegar and season with salt and pepper. Add a dash of olive oil if desired. Set aside.Heat the butter in a frying pan. Fry the lamb chops for 2 minutes on each side.Season with salt and pepper. Serve with the mint sauce.
