Chocolate Muffins

  • 240g/8.4 oz all-purpose flour
  • 100g/3.5 oz granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 240ml/8.4 fl oz whole milk
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 60g/2.1 oz butter (1/2 stick)
  • 90g/3.1 oz dark chocolate chips

Preheat the oven to 200°C/400°F/Gas 6. Combine the flour, baking powder and salt. Melt the butter. Beat the eggs in a separate bowl and then add the sugar, milk and vanilla to the eggs.Thoroughly grease and flour a muffin pan or use papermuffin liners.Pour a tiny bit of the melted butter into the egg-vanilla-milk mixture and stir it in. Repeat 3-4 more times, adding a slightlylarger amount of the liquid butter each time until it is all incorporated. Mix in the dark chocolate chips. Add the liquid ingredients to the dry ones and mix shortly.Gently pour the batter into the prepared muffin pan or liners and bake immediately. Bake 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
