Chicken strips with Parmesan crust

  • 30g/1 oz breadcrumbs
  • 30g/1 oz finely grated Parmesan
  • 1/2 bunch flat-leaved parsley, finely chopped
  • 1 teaspoon dried thyme
  • Salt and pepper
  • 4 chicken fillets
  • 2 eggs
  • 2 tablespoons peanut oil

In a bowl, mix the breadcrumbs with the Parmesan, flat-leaved parsley andthyme. Season with salt and pepper. Cut the chicken fillets into strips measuring around 1cm thick. Break the eggs into a bowl and beat them.Turn the chicken strips in the egg mixture and then in the Parmesan mixture, making sure they are well coated. Place them next to each other in a dish. Heat the oil in a suitable frying pan and fry the chicken strips, in portions,until they are crisp on all sides.
