Sloppy Joe

Ingredients
  • 350g/12.3 oz of lean ground beef
  • 1 large onion (finely diced)
  • 5 tomatoes (dice 3, slice 2)
  • 1 green bell pepper (seeds and veins removed, minced)
  • 1/2 red bell pepper (seeds and veins removed, minced)
  • 2 tbsp all-purpose flour
  • 115ml/4 fl oz water
  • 55ml/2 fl oz cider vinegar
  • 50ml/1.7 fl oz chili sauce
  • 50ml/1.7 fl oz ketchup
  • 8 whole-wheat hamburger buns (toasted if desired)
  • Fresh parsley to garnish
Preparation

Crumble the beef into a large, preheated non-stick skillet; cook over medium heat until it starts to sizzle, about 1 minute. Add onion and peppers and cook, stirring occasionally, breaking up the meat with a wooden spoon, until the vegetables are soft and the moisture has evaporated, for about 10 minutes.Add tomatoes and flour; stir to combine. Stir inwater, vinegar, chili sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce has thickened and the onion is very tender, for about another 10 minutes. Garnish with some tomato and fresh parsley.
