Steamed artichokes with vinaigrette

  • 2 large artichokes
  • 1 tsp. mustard
  • 2 tbsp. red wine vinegar
  • 3 tbsp. olive oil
  • Salt & pepper

Wash the artichokes by soaking in coldwater for 5 minutes. Cut off and discard the stems. Fill the casserole with 3 quarts of water and bring to a boil. Place the artichokes in the steamer basket and steam for 30 minutes. Test doneness by pulling on a leaf: the artichokes are ready if the leaf is easy to remove. Prepare the vinaigrette by mixing the mustard and the vinegar, and then whisking in the oil. Season with salt and pepper to taste. Serve the artichokes warm, with the vinaigrette.
