Mushrooms on toast

  • 50g/1.7 oz butter
  • 1kg/2.2 lbs mushrooms, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper
  • 8 slices of bread for toasting
  • 1 bunch flat-leaved parsley, coarsely chopped
  • garnish: 1 lemon, cut into wedges

Melt a teaspoon of butter in a pan and sauté the mushrooms with the garlic until tender. Season with salt and pepper. Set aside (keep warm). Fry the bread in melted butter until golden brown.Place a generous serving of mushrooms on each slice of bread. Garnish with flat-leaved parsley. Serve with a lemon wedge.
