Muffin Tin Baked Eggs

  • 5 eggs (beaten)
  • 6 slices of salmon
  • Butter
  • Fresh parsley to garnish
  • 6 bacon slices
  • 6 eggs
  • Salt and pepper

Eggs with Salmon: Preheat the oven at 220°C/425°F/Gas 7. Take a muffin tin and coat the holes with a bit of butter. Place each of the 6 salmon slices in a muffin hole. Using a spoon fill the holes with the beaten eggs. Sprinkle the black pepper on top.Bacon & Eggs: In the 6 other muffin holes place a slice of bacon. Break an egg into the bacon. Sprinkle with some black pepper. Place the muffin tin with salmon eggs and bacon eggs in the oven for about 12 minutes. When done take them out using a silicone palette and serve hot.
