Chicken Saltimbocca

4 persons
  • 4 chicken fillets
  • Pepper
  • 4 sprigs sage
  • 8 slices prosciutto
  • 1 tablespoon peanut oil

Season the fillets with pepper. Place a sprig of sage on each fillet. Wrap the fillets in the prosciutto and secure with kitchen string. Heat the peanut oil in a pan. Fry the fillets until crisp on all sides. Reduce the heat and cook for a further 7 to 10 minutes over a low heat. Delicious with polenta.
